People with digestive problems or low potassium levels should consult with a physician before consuming apple cider vinegar. White vinegar is not as acidic as lemon juice, and does not coagulate like lemon juice. While it won’t work as well in recipes requiring lemon juice, it’s an excellent choice for salad dressings. However, this type of vinegar is relatively expensive and difficult to find. It will also spoil quickly if stored in the refrigerator.

Other alternative vinegars are rice vinegar and white wine vinegar. Both of these vinegars contain citric acid and lack the fruity taste that apple cider vinegar does, making them good for many uses. White wine vinegar has a similar acidity level, and can be used in salad dressings as well.
